Will Bali check-in really refuse a one-way ticket?

What exit date should the reservation show?

A date inside the stay your entry grants — 30 days for visa on arrival, counted from your arrival. A date beyond it documents an intended overstay, which is worse than showing nothing.

Can I extend my 30 days and show a later exit?

The extension is granted after you arrive, in Indonesia. The agent at your departure airport can only see what you hold today, so your proof should match your current 30-day entitlement, not the extension you plan to request.

Where do most travelers book their exit flight from Bali?

Singapore, Kuala Lumpur and Bangkok are the short hops out of Denpasar that agents see all day, so they read as entirely plausible. Your exit does not have to leave from the airport you arrived at.
